    I have been accepted for the interview stage for an apprenticeship however they are asking for a project or something similar to show off my strengths, however, due to school, and the lack of engineering/mechanical projects I do outside of school, I have nothing to show them. I was wondering if anyone had any ideas on what to do for these sort of "mechanical/electrical" engineering projects.

    You cna get ideas here, so you should try and go with something. You will be at a disadvantage of you have nothing. It will be harder to convince them if you say due to school and your lack of interests outside school you have nothing.
