has anyone done/doing german from beginners at university degree and how did/are you finding it? is it a huge struggle or is it manageable? is it hard to get a 1:1?

'Hardness' is a relative term, some people find German easier than other languages. But in general yes German is harder than French or Spanish. Pretty much every university offers ab initio (beginners) German. They wouldn't if it wasn't manageable. Lots of ab initio students go on to get firsts.
