I'm doing a magnetics module and can't get my head around what the "exchange" and "Zeeman" energies actually are. If anyone could explain it I would be very grateful.

I'm not sure what level of education you're at. But these articles might help: https://en.wikipedia.org/wiki/Zeeman_effect and https://en.wikipedia.org/wiki/Exchange_interaction. Basically,
Zeeman effect: interaction of spins with a magnetic field.
Exchange interaction: interaction of spins with each other.
