I genuinely and deeply have a crush on my gym instructor like proper. I fantasise about him all the time. I feel like he has a crush on me too. How do I express to him that I do find him attractive?

how old is he and how old are you?
Pretend you don't know what you're doing, have him show you the correct positions. When he's aroused kiss him.
gym instructors have a duty of care to their clients... they can get into serious trouble over relationship issues.
