I'm looking for some useful phrases/sentences that are fairly 'generic' and can be re-formed to suit any topic/theme. I'm particularly interested in expressions of taste and opinion in debate/argument.

It's hard without knowing what you are talking about but phrases impersonal expressions like:
Es Bueno que
Es imprescindible que
Es malo que etc
A mí no me importa que...etc
You can also use it for negative opinion but be careful
No creo que...
No pienso que...
