I think they can ask you about just about anyone (apparently Susannah Walcott has come up before) and just about any theme, so I'd say to learn a little about all the characters - if it's someone as minor as, say, Hathorne, then there'd usually be someone else involved, eg. Danforth and Hathorne - and for themes, you can generally put the same few points for each theme depending on whether or not its a positive theme - say, reason, integrity or loyalty - or a negative theme, such as greed, revenge, betrayal, etc. I've learnt as many as I can from the (old) BBC Bitesize Crucible section, but the theme questions might end up being more of a case of logically thinking about what fits the theme should one arise.

If anybody finds a list though please quote me because I'd appreciate one, too! I hope that helps a bit
