My application got approved today but I only get a loan and not a grant (despite applying for it). It says To make sure you get some student finance in time for starting your course — we've automatically assessed you for finance that doesn't depend on your household income.

I submitted my application back in March but I don't think my mum filled in her bit until a week or so ago - could this be why? This is my fourth year applying and I've always got a grant and my mum's salary hasn't really changed.

Will I still be assessed for a maintenance grant?

If your mum didnt fill it in until a week or so ago, that will be why. They should reassess you once the evidence is processed.

Do parents have to have filled out their bit before the deadline though (which was the 13th of May, I believe)? Or is that deadline for the student to submit an application?

Deadline to submit an application, not deadline for evidence I'd give it a month or so and if you haven't been sent a new entitlement letter, chase it up

The "deadline" people refer to is May 27th. I'd give it about a month or so. It can take some time between you sending off evidence and them receiving and sorting it out.
