How good are St Andrews for Maths? I've been told it's quite prestigious but there are better out there. Is that true?

Also, how competitive is it and how hard would it be to get in?

Well St Andrews is ranked number 1 university in Scotland so I assume you need a fair amount of As at higher/A level. I don't really know which is the best place to study maths, I'm still a student in high school.
St Andrews isn't the only place to study maths though there's also Strathclyde, heriot watt, Edinburgh etc.

St Andrews has a very solid maths department across the board. Yes, it's likely to be competitive.
