Ok say if I did a primary math or secondary science pgce would I have to teach that subject only in future or can I change to something else if I already have the required subject knowledge.

In theory, you're not bound by the subject or age range you've trained in. However in practice, a primary school would be fairly unlikely to employ a teacher trained at secondary level and vice versa (though give the shortage subjects more time and I suspect secondary will take whoever they can get to fill positions).
As for subject, in primary you'd obviously be expected to teach the full curriculum. In secondary, how much you'd teach outside your subject depends on a number of things. For example, I'm training to teach history, but I'll consider myself very lucky if I eventually get a job that doesn't require me to teach at least KS3 R.E/R.S. Staff/student numbers can affect the likelihood of teaching outside your subject more than anything else, it seems.
