So I'm not sure what the difference is between the single slit and the double slit experiments and what they actually show? If anyone could explain the similarities and differences between them, that'd be great!

Both single and double slit experiment demonstrate interference. The constructions are different. The single slit has interference due to the path difference between the two sides of the slit. The double slit due to the path difference between the paths from the two slits.
