well if you had a lesson every day and practiced every day, maybe. bare in mind they are examined seasonally, and it often takes up to 4 weeks for the results to come back.

and to be honest, grade 1 in an instrument doesn't really show manual dexterity. i assume you are going for medicine or dentistry (because most people who use the phrase 'manual dexterity' are). if thats the case, you'd do better to spend your time seeking and completing work experience, instead of faffing around learnign the basics on the piano.

uni interviewers care most about your passion for the subject, and there are other ways of showing your 'manual dexterity'

It depends on a lot of things. Can you read sheet music? Have you played an instrument before? Are you willing and able to dedicate practice time? Can you afford a teacher? Do you have a piano?

Also, different people progress at different rates - it takes some people years, others a few months.

The piano also involves 2 different clefs, and hands doing different things at the same time - obvious, maybe, I know. I should also point out that no instrument is easy to learn.

You would not be able to take an exam with ABRSM exam board before October - their session is November - December, and results take 2-3 weeks.

However, like the above person said, I feel it would be better gleaning experience and enthusiasm for your subject, than trying to get Grade 1 piano, just to put it on your form/impress interviewers.

not long really as long as you put effort in.
whether or not you could have the results by october is different.as long as you are not completely malcordinated and have some sense of musicality then it shouldnt be difficult at all.

Yeah, if you put the effort in and already know the basics (which keys are for which notes and how to read music) you can easily get it done by October if you put your mind to it.
