I know qualifications aren't everything, experience and opportunities all have a big effect. But generally what do you need for 'well paid' job? A levels wise? University?

Totally depends, you can get a well paid job with nothing but there are more options available if you have a degree. There are a lot of apprenticeships that lead to excellently paying jobs, but getting accepted for those is often harder than getting accepted for a University. There are people with no qualifications getting well above average income and there are people with degrees struggling to find a job that uses their degree at all.
In my opinion it's more useful to think about what you would ENJOY doing, and then figure out how to make a liveable wage doing that.
