    Law.

Criminology and sociology are useful if you want to understand why people are criminals or how convicted people are handled in the prison and offender management system, but you will spend the majority of your time learning laws in your police training and enforcing laws when you are fully trained. The laws are key here. It must be acknowledged that you will not spend a huge amount of your time studying PACE or police powers in your law degree, but you will be giving the skills to understand PACE and police powers by having studied law generally.
