I am planning to apply to Birmingham but I don't think I can make it to the open day. Would that hinder my application later on in any way?

I doubt it. Lots of people apply to universities and then go see them after, and I doubt the staff would remember every single person who comes to the open day. There are also many different reasons why people cannot make the open days. I wouldn't worry personally.
The only thing I would consider is maybe taking a virtual tour or make an appointment to take a look around the department, or even just go and have a look around the campus when you do get a chance, because the way the university campus feels may have an impact on where you decide to go. Perhaps take a day trip to Birmingham have a look at the city then look around the campus, it's open to the public so you can walk around and see how it feels. Although, if you want to look around the department you may need to make an appointment.

I didn't go to the open days of any of the universities which I applied to and it in no way hindered my application.
