Environmental Science seems like it would be a good option

It completely depends on what angle you want to approach this from. You may want to look at Natural Sciences or Earth Sciences degrees. In both of these cases, degree structure varies by the university but there are definitely Natural Sciences/Earth Sciences courses out there which would allow you to study all of these things and eventually specialise in the area you like the most. Environmental Science is another option, although that's slightly more specialised. And of course, even more specialised are courses like Geology, Physics, Meteorology, Ecology, Biology etc. It really depends on what you want from your degree. More information would be helpful!
