Hello, in Decemeber I will have to complete a week of work experience. When I'm older I would like to be a counselling psychologist. Does anybody know what sort of things I could do for work experience. I am only 16 years old and certain things have age restrictions of 18+

Okay, well obviously you won't get work experience as a counselling psychologist but you could have an ask around relevant private offices and the NHS to see if you can get experience doing admin work for them, maybe. Being of assistance to those in a waiting room and organising their files would be useful experience.
I'm just assuming that you're in your last year of school. If I'm right, don't worry too much about the work experience. It's great, sure, but if you can't get something relevant even in the slightest it really doesn't matter so if all comes up short you'll be fine.
I hope you find something and I hope you have fun!
