Many new phones that are being released (have been released) such as the Asus Zenphone 3 Deluxe and the OnePlus 3 all feature 6GB of RAM. Is 6GB of RAM ever going to be needed on a phone or is it becoming a war between phone companies to create devices with the most ridiculous specifications?

Not really relevant now - may be more relevant in a couple of years when there are more high performance apps that require more processing power. Phone developers are just thinking ahead. Although I'm sure it is in part so that companies can have phones with better specs than their competitors

In my opinion? No, it's certainly not necessary to have 6GB of RAM on a mobile phone - I mean, just a couple of years ago, 6GB RAM was getting on to be high end PC spec. Even so most computers come with 4-8GB RAM nowadays so you're talking about the amount of RAM in a modern day computer, being used in a phone.. Not necessary.

I mean, my current phone is a 2 year old Galaxy S4, and it has 2GB of RAM... That's plenty for what I need!
