So when I look at most summer internships they say you need to be in your penultimate year of study. However, I'm doing a 4 year course because my 3rd year is a year abroad for French, so I want to get an internship in my second year (which officially is not my penultimate year). Is this possible? Do employers check this?

2nd year of a 4 year course is usually fine although you will be at a fairly significant disadvantage compared to if you were applying in 3rd year.
