I've stayed in half a dozen hostels in my lifetime. I love travelling by myself, and hostels are a must. Im staying in one now for the next 4 days, and this German guy comes into the room. We start talking and I ask if he'd like to grab lunch together. He kind of rejected it. I was just trying to be friendly with people I'm sharing the room with. What went wrong?

I don't think anything really went wrong, he just didn't want to go to lunch with you. It's not a big deal. He maybe had plans already, or didn't feel like he knew you well enough. Maybe he was just too tired, or maybe he just didn't feel like it. Maybe he's not the socialising type. Being polite and talking to roommates is one thing, but going out to lunch and spending time with one another is another thing. You could've both just had different expectations or thoughts. It happens. It's not a big deal so don't worry about it!

In fairness asking someone you've known for five minutes to lunch might come accross a bit strong.
