So yeah, just wondering about everyones opinion as to which finance/economics related jobs (other than accounting :P) are the least demanding as far as mental and physical health is concerned.

There's always a degree of stress for all top level jobs. What I'd say is find companies which you know are good to work for based on experience of talking to people who have worked for said companies. Don't believe the BS of recruiters. For example, A might say at company B, everyone is out the door by 6pm.
You're not gonna be able to be picky when you first start out but give it five to ten years and get qualified and you'll be able to have more of a say about which companies you work for. An example is the aerospace industry, they tend to work kinder hours particularly on Fridays
