Rest assured that if you graduate from any uni with a degree in Medicine you are guaranteed a job as a doctor. Also rest assured that if you graduate with a degree in engineering from Oxford you are also guaranteed a job in that sector.
It's really a matter of which you're most passionate about.

I wouldn't choose a degree based on how easy or hard it is to get in (unless you have absolutely no chance, in which case you'll have to do something else).

If you want to be a doctor, do Medicine. If you want to study Engineering, study Engineering!*

What is this question? You can do either engineering or med at a whole host of universities.. How are you restricted to these three?!?

Anyway do the degree you want to do because these two are completely different from each other and have barely any overlap. If you enjoy maths and physics, problem solving, practical applications and are at least considering becoming an engineer do engineering (otherwise just do straight maths/CS/physics etc). If you want to be a doctor and are absolutely, 100% committed to the long haul that is a medical degree and career, do medicine. Don't make this about money or anything superficial or even what your parents want you to do, think about what YOU want for yourself at university and beyond.

Absolutely no one here can make that decision for you.

No one is guaranteed a job even if they graduate from Oxford

It sounds like you have the wrong motives for thinking about studying medicine.
