So initially I wanted to do Medicine and actually got an offer at Manchester, however, now Im having second thoughts. If I was to apply to McKinsey for their Business Analyst role then will I have any chance if I attended Queen Mary University of London and studied Medical Engineering (albeit I did get a first)? Or does McKinsey really target the Oxbridge candidates and overlook all the other Russell group universities?

So you want to go into management consulting, not necessarily at McKinsey & Co.
I don't see why not, if you get a really good grade and show initiative, banks like Goldman have huge investments in these sectors also. Bain cover consulting and private equity.
Could always do an M.Sc. in Management / Management Science afterwards.
Cambridge have an M.Phil. in Management if you want to get that on your CV.

In reality, you don't have a chance. No harm in applying but if you're really keep on MBB but can't get in now then join a lesser consulting firm (AT Kearney, OW) and then go do an MBA at a top school.
Sounds like to me you don't really know what you want.
