I assume most of them require them, are there any that don't? Also, how do you find out which unis are the best for engineering

If a university has an interview for engineering it's informal and not really used as part of the admissions selection process. The vast majority of people called for interview will get an offer. It's more a chance for you to meet with lecturers than anything else.

The exceptions are Cambridge, Oxford and to a lesser extent Imperial. They do use the interview as an important part of their shortlisting process.

Standard response for engineering admissions questions: It's engineering, no one gives a damn as long as you get the grades

More specific response: Bar Oxbridge and Imperial any interview will be very informal, they'll probably only be relevant if you knock out a lecturer or if you drop two grades compared to your offer. Even for the mentioned unis their interviews for engineering are supposedly less formal than for their other subjects.

Oxbridge interviews are as "formal" for engineering as their other courses.
