I just discovered that I'm gonna have to keep History, I wasn't planning for this and I don't know how to structure any of it, don't have books to reference from. What do I do?

Your coursework is not due a week. The real deadline is sometime in April.

Tell your sixth form that you weren't prepared for it and ask if you can do it throughout the year.
