    I'm hoping to improve my language skills and achieve proficiency in a language, be elected onto something to demonstrate leadership, and perhaps do some side research?

    I want to do lots of different stuff at university so what things are you hoping to do so I can get some more suggestions on how to improve my CV.

    Join a sports club and do some volunteering

    I had similar goals to you OP, actually, I am glad I'm not the only one.

    I want to coin together a team of friends / undergrads / anyone who is interested to do group research into technologies that interest me (specifically space-related ones) and perhaps some into economics/geography, and they will help me decide what I want to do in the future. Their plan would be to read up on current literature on the topic, attempt to develop new ideas, and possibly test them within the university's facilities.

    Running these kind of teams is going to be a source of genuine leadership experience, which a CV wouldn't even be able to capture fully.

    And then I also think learning a language is a good idea. A very good one actually.

    And finally, for entertainment, you could try the university cadets (UOTC) or some kind of sport, or maybe debating.
