For my A-levels (doing AS), I've taken Economics, Physics, Further Math, Math and French. I was wondering if I should swap out Econ/French for Chemistry, seeing as many people say it is quite useful? But so is Econ&French and I am not sure whether I would like Chemistry or whether I do even want to do something in that field..thoughts? I'm more focused on Software Engineering/Finance.

You'll do better in what you like
Also, though chemistry is seen as useful overall, take into consideration your career choice and choose appropriate subjects according to that because chemistry may not be relevant and instead the subjects you thought weren't that useful in comparison could be what you need. You sound like you'd like to do accountancy or something related so in this case chemistry wouldn't be needed

Chemistry isn't useful for software engineering or finance. It's definitely one of the most respected subjects - but if you're uncertain of it/have no use for it, then I wouldn't really recommend it.
