It is possible to do a Higher without the National 5 in a subject, this is known as a crash Higher. This means that you could take new subjects at Higher without having to do the National 5 beforehand.
However most schools will not allow pupils to crash any Highers in S5 because of the sheer jump from N5 to Higher. Its fine in S6 because you've probably already experienced Highers by that point and you know the workload involved, pace, etc.
So in summary, its more than likely that your choices for Highers in S5 will be restricted by what N5s you did in S4 (and how well you did in them).
