    I'm trying to grasp the science behind the test.

    I understand that the penta-iodide and tri-iodide ions slip inside the helix of amylose. However what actually causes the colour change from brown to blue black?

    I'm trying to do some research, I can understand that charge is transferred between the starch and iodide ions, and this transfer in charge results in a light being absorbed at a different wavelength causing the colour change.

    Is this correct?

    Yeah that's right. You can look more at different energy 'levels' of electrons and the effect it has on wavelength therefore light. But it sounds like you already understand it xx
