So basically I had to decide my A level choices a few days ago after a very hectic year away from education. The option blocks had changed drastically and I had no other option.

    I attained 1A* 8As and a C at GCSE in 2015.

Not the best, but certainly not bad at all.

I am studying the following in college:

    English Literature (A at GCSE)

    History (A at GCSE)

Sociology (A/A* in every GCSE essay subject)

    Extended Project Qualification

The other subjects on offer are things I genuinely am not passionate about at all.

I basically have to choose between RS and Psychology (Both like pulling teeth for me)

My other option of Geography overlaps with literature, and due to the fact the college is small, they can only cater to a condensed option block.

My question is simple, will the lack of an extra AS level hinder my application greatly?

I am looking at Unis in the ABB-AAA range, ideally Liverpool.

Nope, absolutely not. Universities only make offers based on 3 grades. In fact, only taking 3 subjects for 2 years is becoming increasingly common due to the changes to linear qualifications so you will not be disadvantaged.
