I'm looking to study sports and exercise science at university. However most courses I have looked at require a core science or maths. For alevel I have taken art, geography and physical education. I'm currently in my 2nd year and because of the new system I can't fast track biology. If I want to pick up a science I would have to do a 3rd year. But I don't know whether to try and apply for university this year or do the 3rd year and take up biology?????

Are you sure you need biology? I did a quick google and the first university I looked at, Birmingham, says "Science subjects: Biology/Human Biology, Chemistry, Economics, Geography, Maths, PE/Sports Studies, Psychology, Physics, Statistics, Geology".
I think you should email admission tutors and ask if you meet the entry requirements before you do anything else.
