I'm about to start studying pharmacy this year, my sister studies medicine so I'd say
Working hours: both pretty high but medicine is definitely more

Payment: Depends how quickly you can work your way up. Medicine can take 3-10 years before becoming specialised in an area whilst pharmacy doesn't seem to take as long to work your way up as pharmacy graduates already start at band 6 and band 9 is the highest. But still Doctors have a higher payment once they're specialised in an area and no longer a junior doctor.

Working in different fields: I'd say they're both quite broad. Doctors can specialise in pretty much any area of medicine/ become gp's/ go onto surgery. Pharmacists there's loads of different types hospital/ community/ industrial/ veterinary/ education (like you can spend a few days a week practising and the other days teaching at a uni)

Most people would say medicine but really do what you want, there is a need for more doctors currently
Bottom inspector vs shopkeeper. The world is your oyster.
