I'm doing Maths, Further Maths, Biology and Chemistry. I want to do Economics at a top university and decided to change one of my sciences to Economics. Does it matter which I drop? I'm better at Chemistry FYI

I would keep on chemistry. A2 is so much nicer than AS, and if you want to go to a top uni, pick the subject your likely to get the highest grade in. Also biology is a lot of hard work and huge amounts of revision at A2, for something that isn't really related to the degree you want, I would advise dropping Bio.

If you want one non-mathsy subject keep biology, if you don't mind having another maths subject keep chemistry.

You should take a look at the specifications and see which one appeals to you more.
