I am so done with PE, so I just want to know. Will universities hear about my PE attendance if I don't attend a few times?

No, because (for me anyways), the college sixth form will say only what they know, aka attendance there and no mention of high school. Unless you are doing GCSE PE than don't worry about it

Of course not, schools and colleges want students to go to uni as it makes them look good, so while they can't lie not attending PE wouldn't be mentioned in the reference...

PE was good though, a lot of sport and fitness.

I didn't do PE for the last few months of year 11  They won't know nor will they care.

Unlikely. In theory they could put it on your reference but they're not going to be that petty unless you're seriously taking the mic.
