I have a question, I'm currently on three PAYG on my samsung S3. I want to upgrade to a contract phone and I was wondering if I could switch to a different phone carrier like EE or O2 and keep my old number. How does that process actually work

Call your provider and ask for a PAC code. Give your PAC code to your new phone provider when you order your new phone.
