What does it mean by "The egg and sperm cell have different variations of their genes", can someone please explain.

The egg will have different characteristics, like hair colour, eye colour and etc, while the sperm will its own different characteristics. Pretty simple.

Okay so its like saying that because you inherit different combinations of characteristics from your father and mother and some will be from the egg and others from the sperm? So our parents genes are in the sex cells?

A gene that has different variations is an allele. Each gamete is haploid, so they contain 1 set of chromosomes. We are diploid - we each have 2 sets of chromosomes.

So each parents' gametes will have an allele of an eye colour, E.g. blue and brown. Brown is dominant so the child will have brown eyes but be a carrier of the blue eye allele.
