Can someone explain 'amount of substance, moles and Avogadro constant' please

Amount of substance = is the quantity that has moles as its unit.

Moles = amount of any substance containing as many particles as there are carbon atoms in exactly 12g of the carbon-12 isotope. (Really need help with this)

Avogadro constant = number of atoms per mole of the carbon-12 isotope.

also, why is everything related to carbon-12???
