For instance if you did like a PPE at Oxford and don't have much math in college, can you still be accepted to LSE MRes/PhD economics? Do people without 1 year+ math have to resort to the MSc first? What if a few years of substantive research experience is combined with the above profile?

You just need to read the pre-requisite of the MRes/PhD course. It lists modules (micro, macro, econometrics, quant methods and advanced courses). A few PPE students enter straight to a 1+3 UK PhD Econ or a 5 yr US PhD programme. Others do a MSc.
