I'm considering applying for either an economics degree, economics and business degree or and economics and finance degree.
Are the latter seen as inferior to economics?

Who's opinion are you concerned about?

The problem with some joint honours is down to organisation - clashing timetables, limited support from one or both subjects etc etc - that can lead to students underperforming and getting a lower degree classification than they're capable of. But that's easy to test for - ask universities about the number of students on the specific joint honours you're applying to, ask to speak to current second and third year students and ask about whether they have had problems with timetabling clashes or modules expecting them to know content that they couldn't cover.
