The pH decreases as the lipid is digested forming glycerol and fatty acids. The fatty acids lower the pH as they are acidic.

Evidence from the graph that bile helps digest lipids is that the pH decreases much more quickly than without bile.

The pH is the same in both beakers at the end as the same amount of lipids have been digested, therefore producing the same amount of fatty acids.
