I am picking my options for GCSE and it is about a week until the deadline. I think I will choose Art, Spanish and Drama. However I want to make sure that I don't find I have limited options for A levels, Uni or future jobs because I picked 2 creative subjects. Would these be ok?

It would be best to check the university websites to see what they say. I think it should be ok

depends what you want to do at uni and/or for ur future. if you like art and/or drama and think you may want to do it for a future career then go for it! also art and drama can be useful for thing like engineering, architecture and just being able to do public speaking - so also assess if the skills will help ur future in an indirect manner.
