I'm studying The Great Gatsby (and also Paradise Lost) and I was wondering if anyone has any advice on what books I should read for 'reading around the subject'.

I do not know about books, but I have a few ideas regarding what to read around the subject.
Read essays about The Great Gatsby, read about the author, and of course, about the historical/social/economic context of The Great Gatsby. See what critics say, explore others' interpretations of the book, make your own.
Reading around the subject does not have to involve any other books if you do not want it to. I myself never read a single book around the subject (I just read essays) and I still did fine.
