My exam board is CCEA and unit 2 exam is functional writing and reading non-fiction. Now I can think of plenty topics to write about and it would be good if I seen my idea on an official gcse exam paper. Can you do this?

How old are you? If you've finished your degree and are working in a relevant area/ for the exam board/ are a teacher then it might be possible...

If you're still doing GCSEs/ A levels or the like, perhaps use your ideas to start a Creative Writing club or Literature Analysis group - this would be good fun and great to mention on your uni application
