    I was interviewed by, let's say, collage A and B, and received an offer by college C. What does that mean?

    Thanks. Does getting pooled mean that colleges that did interviewed me didn't want to give me an offer?

    It probably means that you were interviewed by colleges that didn't have enough space for the number of applicants they wanted to give offers to, so it means that some of the successful interviewees were moved to other colleges that have space. If you've got an offer you've got an offer

    I submitted an open application, so wouldn't they assign me to a college with fewer applicants?

    Yes, but remember that was all done before interviews. Applicants are moved around before interviews so that each college is responsible for a sensible number of applicants that is broadly proportionate to the number of people they are able to admit, but because of the fairly small numbers college A might have an unusually high proportion of "good" applicants and college B an unusually low proportion.
