What IB subjects should I take and at which level? I want to study Economics at Cambridge or other top universities. I am thinking about:
    Maths HL
    Economics HL
    French HL
    Biology SL
    English Literature SL
    Global Politics SL
Is this fine? What should I change?

I think your subject combo is fine, I would maybe switch french tie GP or English Lit, as it would (in my opinion) make a bit more sense (essay writing is quite important, and so are global affairs).

Other than that it's really good, especially the maths&econ combo.
