Sometimes I can be somewhat slow to understand what the person is insinuating, I get sarcastic responses and it makes me feel stupid when honestly I just have a habit of double checking things. But it's happening so often that it's starting to hurt myself esteem, how do I get over it ?

In what context? I think you shouldn't worry about it. Sometimes it's not sarcastic at all, "nah" is quite a common thing to say these days but without any background it's hard to say what it could imply.
