Like when I'm in school, if you're choosing to take maths or one of the sciences, people will say "you must be smart". And in daily life, someone who is a physicist is deemed more intelligent than an artist or historian even though in reality, they are all equally intelligent?

    Math/Science is taught extremely badly.

The dude that can physically and mentally endure years of awful teaching to do Maths/Science rightfully gets the worship they deserve*.

*but it's not really because they're smarter..

Partly because it's easier to discern what the intelligent actions are for (more of) science.
