So right now I'm in my first year in college, studying Biology, Psychology and maths. But now because I've became interested in medicine and would like to be a doctor, I have to stay another year at college to study chemistry along side other AS level. Would I be able to apply to study medicine in uni if I've stayed another year at college?

It will depend on the university, it is worth looking at their entry requirements and get in contact with them if it's not clear. From what I know, the majority of them will want them to be sat in two years, although this is mainly to combat retakes.
