I'm in year 12 and I'm studying Physics, Maths, Further Maths, and Chemistry, I got 9A* 2A at GCSE and i'm on track to get 4A at the end of AS. I also want to apply to Oxbridge. I'm planning on doing a sciency subject at uni like, physics, maths, engineering or medicine. If there are any other that you think could interest me please mention!!!

You could do most things with those uni choices. I think (someone correct me if I'm wrong) most of the money is in investment banking, technology, corporate law, medicine, and strategy consulting.

There are only a very few careers in which gatekeeping extends to the subject of your undergraduate degree: Medicine, Veterinary Science, Dentistry, Architecture &c. For the most part a degree is only an indicator of intelligence and (broad) socialization. A degree implying quantitative skills might make you more employable out of the traps, but all of those you're considering are degrees like that. Just do what you most fancy, then.
