I'm currently a first-year student doing a joint honours degree in English Literature and History. However, I'm getting two very different results so far. Last semester I received 2:1's in my two history modules whereas in English I received a 2:2 and a third.

Would it be best to carry on doing the joint honours and just work harder on English Literature, or should I just do a single-honours in history when this semester is over?

Speak to your tutor about your marks so far and the options available to you. They should be able to help if it's just differences in first year marking (some courses will mark more generously in the first year "because it doesn't count" while others will mark at a final degree level standard from the start) or some small changes you need to make to improve your marks....and if it isn't something that can be easily resolved they'll be able to explain the process for switching to single honours.
