Hi, I am a year 12 studying AS chemistry, maths, biology and music but I just realised that physics is "highly desired" for a course that I would like to apply for next year. Is it too late to pick it up as a fifth subject now?

If you've learnt some of M1 in Maths then adapting to Physics should be less difficult, probs electricity and waves you should be worried about (possibly particles)
It's never too late, if anything it's recommended you switch out Bio, 5 AS-levels would look v cool, many peeps would always mention how detrimental it would be to your grade tho.

If youre going to be dropping a subject next year, then take it up in year 13, along with your 3 other a-levels.
